Temperatura rapida/stabile/costante

La temperatura ha una grande influenza sulla fermentazione. Influisce sulla velocità di varie reazioni enzimatiche, cambia la direzione di sintesi dei metaboliti batterici, influisce sul meccanismo di regolazione metabolica dei microrganismi, influisce sulle proprietà fisiche e chimiche del brodo di fermentazione e quindi influisce sulle caratteristiche dinamiche della fermentazione e sulla biosintesi dei prodotti. L'influenza della temperatura sulla velocità di reazione chimica è solitamente espressa dal coefficiente di temperatura (Q10) (il multiplo della velocità di reazione chimica quando la temperatura aumenta di 10 ℃).
